INTRO

A debut lot of the rare Marshell varietal from David Flores at the El Morito estate in Cajamarca โ€” the third consecutive year of direct trade between Apollon's Gold and this exceptional Peruvian farm. A Bourbon mutation of remarkable complexity, this washed Marshell delivers the vibrant intensity more often associated with natural-process coffees, while retaining the crystalline clarity that only meticulous washed processing can achieve. In the cup: vibrant longan sweetness, tart passionfruit, and a playful strawberry bubblegum finish.

THE PRODUCER

El Morito is David Flores' estate in Cajamarca, a high-altitude growing region in northern Peru where extreme elevation, cool temperatures, and slow cherry development produce beans of exceptional density and cup clarity. Apollon's Gold's direct trade relationship with the farm began in the 2024โ€“2025 season, with previous selections highlighting Geisha and Yellow Caturra. The El Mango plot, home to this Marshell lot, represents a new chapter in the partnership โ€” and a landmark expression of what this farm is capable of at its most ambitious.

The Marshell varietal is a rare Bourbon mutation, prized for its structural complexity and remarkable sweetness. It is exceptionally uncommon to find it processed to this level of precision, and this lot โ€” combining the varietal's inherent intensity with the purity of a washed process โ€” is considered a pinnacle of the estate's output.

THE PROCESS

The Washed process at El Mango involves:

๐Ÿ’ Hand-picking โ€” Cherries selectively harvested at peak ripeness ๐Ÿ’ง Flotation sorting โ€” Low-density cherries removed before pulping ๐Ÿ”ง Depulping โ€” Outer fruit skin removed from the bean ๐Ÿงช Fermentation โ€” Beans fermented to break down remaining mucilage ๐Ÿ’ฆ Washing โ€” Thoroughly washed to remove all fermentation residue โ˜€๏ธ Drying โ€” Dried to optimal moisture content, preserving structure and clarity

The meticulous washing and controlled fermentation are the defining steps โ€” stripping the processing back to allow the Marshell's extraordinary natural sweetness and vibrancy to express themselves without interference, while the high altitude of Cajamarca ensures the clean, structured body that runs through every cup.

THE CUP

A truly rare washed Marshell from one of Peru's most compelling high-altitude estates โ€” vibrant and sweet beyond what washed processing typically allows, with a longan-forward opening, tart passionfruit at the heart, and a lingering confectionary finish that is entirely its own. A coffee that redefines expectations.

About this variety

Marshell is showing a vivid, aromatic style across carefully separated Peruvian lots. Reviewed washed coffees range from longan, passionfruit and strawberry sweetness to peach, plum, blossom and black-tea structure. The shared lift is useful context, but each producer's elevation, selection and processing still shape the cup.

Why this one is different
  • Peru
  • Cajamarca
  • 1850 masl
  • Washed

High-grown Peruvian Marshell can be vivid, floral and fruit-layered. David Flores's reviewed washed lot brings longan, passionfruit and strawberry-bubblegum sweetness, while another El Morito lot shows peach, plum, blossom and black tea. Clean washing and high Cajamarca elevations help keep those expressive flavours structured.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Marshell is rooted in Cajamarca producer selection and is now cultivated by several farms around San Ignacio and El Morito. Its local history and repeated farm traceability are well supported even though its precise genetic origin is not.

Identification note Marshell's genetics remain unresolved. This context reflects repeated Peruvian producer usage and cup evidence without converting the reported Bourbon or Catimor relationships into fact.

Classification Emergent Peruvian local selection

Technical lineage Unresolved Peruvian local selection, preserved under the producer-supplied Marshell name.
