INTRO
A complex and full Colombia Rosado from Yoiner Mosquera in Palestina, Southern Huila. Overripe cherries undergo a 72-hour anoxic resting period in-husk before slow greenhouse drying. Sweet apricot jam, orange peel notes, process-forward sweetness, and a bright, juicy finish. In the cup: apricot jam and candied orange peel.
THE PRODUCER
Yoiner's family has been in coffee in Palestina for around 80 years, and his grandparents helped found Palestina, one of Colombia's younger municipalities. He leads a broader coffee project in Huila built around his family's farms, partner producers, and long-term relationships. After hearing about work being done in the region in 2016, he brought together a group of producers and developed a structured supply network around quality, consistency, and careful processing.
THE PROCESS
The cherries are picked at an advanced stage of ripeness and rest for 72 hours in-husk in a sealed container (an anoxic rest), then dry slowly in a greenhouse for approximately 20 days.
The 72-hour anoxic rest in-husk followed by slow greenhouse drying is the defining combination. It builds the process-forward sweetness behind the apricot jam and candied orange peel, with Rosado's structure and clarity keeping it from becoming heavy.
THE CUP
Complex and full, with plenty of brightness: sweet apricot jam and candied orange peel, with a pronounced sweetness and a juicy finish. Expressive without becoming heavy.
