El Paraíso has been a family project since 2008 and has gradually become a place focused on precisely controlled fermentations and developing new processing methods. Diego studied agricultural management and also develops his methods through Indestec, a company working on technologies for consistent coffee processing. This is a fresh June 2026 harvest from the current season.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e\u003cbr\u003eThe Y05 method combines an extended washed process with several precisely controlled fermentation steps. Ripe cherries are first disinfected with ozone and kept submerged in water for 72 hours. They are then depulped and fermented for a further 36 hours in a bioreactor with added yeast cultures.
