It consistently produces some of the most dynamic and expressive examples of Chiroso in the lineup. Urrao remains difficult to access, reached in part via an avocado transport plane, with plans to finally visit the farm and its people this year.\u003c\/p\u003e\n\u003cp\u003eChiroso is a relatively new variety, primarily grown in Antioquia, only recently gaining attention for its cup quality potential and beginning to spread. They're transported by horse to the main road, then by car to the house and mill, where they're de-pulped and fermented underwater in stainless steel tanks using the cochadas method — coffee added to the tank throughout the week and washed together on Monday.
