Both sites produce exceptional washed and natural coffees and are now developing experimental lots as part of an ongoing effort to further refine and elevate quality.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e\u003cbr\u003eCherries are hand-picked at peak ripeness, floated, then held in-cherry for 12 hours in shade. After de-pulping and cleaning, the coffee dry-ferments in plastic barrels for 12 hours, followed by 12 hours of wet fermentation.
