Cherries were hand-picked above 20 Brix and 2,450 MASL, a level of selectivity that speaks to the precision behind this lot.\u003c\/p\u003e\u003cp\u003eEthiopia's coffee biodiversity is unmatched, with over 60 distinct varieties identified through DNA testing — yet single-variety lots remain rare given the structure of the country's coffee trade. Most Ethiopian coffees are blends referred to simply as Ethiopian Landrace, which makes a lot this traceable genuinely special.\u003c\/p\u003e\u003cp\u003eTHE PROCESS\u003c\/p\u003e\u003cp\u003eCherries were hand-picked above 20 Brix and floated for selection, then held in-cherry for 12 hours in shade. After de-pulping and cleaning, the coffee underwent a 12-hour dry fermentation in plastic barrels, followed by a further 12 hours of wet fermentation.
