They purchase cherry from these small producers at a premium price, alongside educational support in good agronomic and harvest practices. The project also works with AMCAPEC, an association of women coffee growers from the municipalities of Tambo, Piendamó, and Caldono in Cauca — a genuinely lovely initiative helping small producers sell their coffee transparently and with greater benefit.\u003c\/p\u003e\n\u003cp\u003eAll coffee from this project is processed at Finca La Inmaculada, ensuring consistency and full traceability for every lot.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e\u003cbr\u003eCherries from the various neighbouring farms are received at La Inmaculada, where they undergo flotation selection to remove leaves, stones, and low-density cherries. They then pass through electronic sorting to select optimally ripe cherries, followed by manual selection.
