What grows there are coffee gardens rather than farms, most only a hectare or two, planted beneath false banana and shade trees and worked without chemicals because nobody there ever started using them. Everything sits at roughly 1,950–2,150 masl, so the cherry ripens slowly and comes in dense and sweet. The varieties are the local landraces growing across Gedeo, a mix nobody has ever fully catalogued.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e\u003cbr\u003eCherry is picked ripe, delivered the same day, pulped, and fermented in tank, then washed clean and laid on raised beds for about two weeks, turned by hand and covered through the hottest part of the afternoon.\u003c\/p\u003e\n\u003cp\u003eThe tank fermentation followed by slow raised-bed drying is the defining combination.
