Coming from a background in wine as much as coffee, they brought carbonic maceration and experimental fermentation techniques to the farm from the start, focused from the beginning on rare, high-quality varietals including Gesha, Sudan Rume, and Ethiopian heirlooms.\u003c\/p\u003e\u003cp\u003eTheir approach paid off: in 2019 Mikava took first place at the Colombian Cup of Excellence with a record-breaking score of 92.71 — the highest in Colombian COE history, and the first time a naturally processed coffee had won.
