At 2,000 MASL, the cool temperatures and slow cherry development typical of the area concentrate aromatic compounds and build the vivid, clean profile that makes this lot so compelling. The cochadas processing method — a rolling fermentation in which new pickings are added to previous days' coffee every four to seven days before washing together — reflects the practical reality of small-volume harvesting, and produces results that are cleaner and more consistent than the name might suggest.\u003c\/p\u003e\n\u003cp\u003eChiroso is a variety grown primarily in Antioquia, genetically identified as Ethiopian Landrace.
