A lot tasted and chosen themselves at Lalesa Washing Station in Gedeb: purple florals, citrus, baked peach, and a subtle thread of hops. It tastes like the season it arrived in.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e\u003c\/p\u003e\u003cp\u003eCherries are collected and hand-sorted before being pulped using a traditional Agaarde Disc Pulper, which also grades the coffee by density at the point of pulping. The coffee is then fermented submerged in water for an average of 72 hours, before being graded again in channels — lower-density fruit floats and is removed, leaving the denser, higher-quality parchment to be separated as a distinct lot.
