The Goro washing station first came online in 2013 and runs with seven permanent staff and up to 100 seasonal workers — expect to see several more of Habtamu's coffees on the menu this year.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e Pulping left roughly 10% mucilage stuck to the seed — a mini-honey, in effect. The coffee fermented for 24 hours, then was hand-washed and shade-dried, stirred regularly and continually sorted to remove defects throughout drying.\u003c\/p\u003e\n\u003cp\u003eThis mini-honey-style pulping is the defining detail — the residual mucilage adds a touch of body and sweetness to what's otherwise a clean, classic washed profile, supporting the orange, anise, and apricot character in the cup.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE CUP\u003c\/strong\u003e Balanced and easy-drinking — orange and apricot sweetness up front, with anise spice woven throughout.
