The site receives high solar exposure through much of the year and is shaped by air currents rising through the Juanambú River canyon. Coffee cultivation began here in the 1990s; José Ignacio Gómez, a second-generation producer, has owned the farm since 2008, after acquiring it with his father from his uncle, who had originally planted and cultivated it. The farm's documented varieties include Caturra, Gesha, and Pink Bourbon.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e Ripe cherries are hand-harvested and visually sorted by colour, then manually sorted, washed, and density-separated through flotation on the day of collection. The sorted whole cherries ferment for 24 hours in 200-litre plastic tanks under oxygen-excluded, dark conditions. After this first fermentation, the coffee is mechanically depulped without water, then undergoes a second 24-hour fermentation with dry mucilage, again under oxygen-excluded, dark conditions.
