UCANOCH is a vital ally for minority producers in Mexico — 46% of its member base are women, and nearly all belong to the Tzeltal and Tzotzil indigenous communities in Chiapas. This lot consists of deliveries specifically from the Los Altos community.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e Cherries are handpicked at peak ripeness and pulped the same day using manual pulpers.
